Growing up sweet potatoes came from a can.
We ate them with brown sugar and butter. And only on
Thanksgiving. Later, Mr.Fix- it and I grew them in our garden.
I remember mashing them and putting them in soups.
In one of the churches we attended the door greeter
baked them in foil and ate them for breakfast while she
did her door greeting. This little plated sweet potato
is topped with ground hamburger, mushrooms, kale, onions,
garlic and cream cheesed. It was delicious. Even so, Mr.Fix-it
covered his last bit of potato with syrup!
Sweet potatoes are one of my favorite foods! They’re so versatile and you can top them with a lot of things that make them a meal or dessert. I had the same experience as you growing up so I’ve been making up for all that lost time and eat them a few times a week. I haven’t tried topping them with meat, so that will be my next thing to try!
Love that you are making up for lost time.
